Homemade apple cider is a warm, spiced drink made by simmering fresh apples with cinnamon and cloves. It is naturally sweet and alcohol-free.

  • 10 medium apples (mix of sweet and tart), washed and quartered
  • 1 orange, quartered (optional)
  • 1 cinnamon stick
  • 1 teaspoon whole cloves
  • 1/2 cup brown sugar (adjust to taste)
  • 8 cups water

Instructions

  1. Place apples, orange (if using), cinnamon stick, cloves, and brown sugar in a large pot.
  2. Add water. Bring to a boil over high heat.
  3. Reduce heat to low. Simmer uncovered for 1.5 to 2 hours, until apples are soft.
  4. Remove from heat. Mash apples with a potato masher to release more juice.
  5. Strain the mixture through a fine-mesh sieve or cheesecloth into a large bowl. Discard solids.
  6. Let the cider cool slightly. Serve warm or chilled. Refrigerate leftovers.

Notes

  • You can add a star anise or nutmeg for extra flavor.
  • Adjust sweetness by adding more or less brown sugar.
  • For a clearer cider, strain twice.
