A delicious and easy honey mustard chicken salad perfect for lunch or dinner.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 4 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix honey and mustard in a small bowl.
  3. Coat chicken breasts with half of the honey mustard mixture.
  4. Heat olive oil in a skillet over medium heat. Cook chicken for 5-6 minutes per side.
  5. Transfer chicken to a baking dish and bake for 10 minutes.
  6. Slice cooked chicken into strips.
  7. Toss mixed greens, tomatoes, red onion, and carrots in a large bowl.
  8. Top salad with chicken strips and remaining honey mustard dressing.
  9. Sprinkle feta cheese on top.
  10. Serve immediately.

Notes

  • Use Greek yogurt instead of mustard for a lighter dressing.
  • Add avocado slices for extra creaminess.
  • Store leftovers in an airtight container for up to 2 days.
