- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup shredded carrots
- 1/4 cup crumbled feta cheese
- Salt and pepper to taste
- Preheat oven to 375°F (190°C).
- Mix honey and mustard in a small bowl.
- Coat chicken breasts with half of the honey mustard mixture.
- Heat olive oil in a skillet over medium heat. Cook chicken for 5-6 minutes per side.
- Transfer chicken to a baking dish and bake for 10 minutes.
- Slice cooked chicken into strips.
- Toss mixed greens, tomatoes, red onion, and carrots in a large bowl.
- Top salad with chicken strips and remaining honey mustard dressing.
- Sprinkle feta cheese on top.
- Serve immediately.
