- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 1/2 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 medium zucchinis, sliced into rounds
- 2 large tomatoes, sliced into rounds
- Fresh parsley for garnish (optional)
- Preheat your oven to 400°F (200°C) or prepare an outdoor grill for medium heat.
- In a small bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, salt, and pepper.
- Place each chicken breast on a large piece of heavy-duty aluminum foil (about 12×18 inches).
- Divide the zucchini and tomato slices evenly among the packets, placing them around the chicken.
- Drizzle the honey mustard mixture over the chicken and vegetables.
- Fold the foil tightly to seal each packet, leaving a little space for steam.
- Place the packets on a baking sheet (if using oven) or directly on the grill grates.
- Bake or grill for 20-25 minutes, until the chicken is cooked through (internal temperature 165°F).
- Carefully open the packets and serve immediately. Garnish with parsley if desired.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- Add a pinch of red pepper flakes for heat.
- Serve with rice or quinoa to soak up the juices.
