A moist and tender loaf cake sweetened with honey. Perfect for tea time or a simple dessert.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and honey until light and fluffy.
  4. Add eggs one at a time, beating well after each. Stir in vanilla.
  5. Alternate adding flour mixture and buttermilk to the butter mixture, starting and ending with flour. Mix until just combined.
  6. Pour batter into the prepared pan. Bake for 40-45 minutes, until a toothpick inserted in center comes out clean.
  7. Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

  • You can substitute buttermilk with 1/2 cup milk mixed with 1/2 tablespoon lemon juice.
  • Store the loaf in an airtight container at room temperature for up to 3 days.
  • For extra honey flavor, brush the warm loaf with 1 tablespoon honey.
