- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, beat butter and honey until light and fluffy.
- Add eggs one at a time, beating well after each. Stir in vanilla.
- Alternate adding flour mixture and buttermilk to the butter mixture, starting and ending with flour. Mix until just combined.
- Pour batter into the prepared pan. Bake for 40-45 minutes, until a toothpick inserted in center comes out clean.
- Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
Notes
- You can substitute buttermilk with 1/2 cup milk mixed with 1/2 tablespoon lemon juice.
- Store the loaf in an airtight container at room temperature for up to 3 days.
- For extra honey flavor, brush the warm loaf with 1 tablespoon honey.
