A comforting Indian pumpkin curry made with simple spices and coconut milk. It is mildly sweet and savory.

Ingredients

  • 500 grams pumpkin, peeled and cubed
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
  2. Add chopped onion and sauté until golden brown.
  3. Add garlic, ginger, and green chilies. Cook for 1 minute.
  4. Stir in turmeric, coriander, and red chili powder. Cook for 30 seconds.
  5. Add pumpkin cubes and salt. Mix well. Cover and cook for 10 minutes, stirring occasionally.
  6. Pour in coconut milk. Stir and bring to a simmer. Cook for another 10 minutes until pumpkin is tender.
  7. Garnish with fresh cilantro. Serve hot with rice or roti.

Notes

  • You can adjust the spice level by adding more or fewer green chilies.
  • Use canned or fresh coconut milk for best results.
  • This curry tastes better the next day as flavors meld.
