- 500 grams pumpkin, peeled and cubed
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, slit
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro for garnish
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
- Add chopped onion and sauté until golden brown.
- Add garlic, ginger, and green chilies. Cook for 1 minute.
- Stir in turmeric, coriander, and red chili powder. Cook for 30 seconds.
- Add pumpkin cubes and salt. Mix well. Cover and cook for 10 minutes, stirring occasionally.
- Pour in coconut milk. Stir and bring to a simmer. Cook for another 10 minutes until pumpkin is tender.
- Garnish with fresh cilantro. Serve hot with rice or roti.
Notes
- You can adjust the spice level by adding more or fewer green chilies.
- Use canned or fresh coconut milk for best results.
- This curry tastes better the next day as flavors meld.
