- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 3 cups peeled and diced apples (about 3 medium apples)
- 1 tablespoon demerara sugar for topping
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a small bowl, beat the egg, milk, and vanilla together.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the diced apples gently.
- Spread the batter evenly into the prepared pan. Sprinkle demerara sugar on top.
- Bake for 40 to 45 minutes, until golden brown and a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- You can use any tart apple variety like Granny Smith or Bramley.
- Serve warm or at room temperature, optionally with custard or whipped cream.
