A hearty Italian sausage tortellini soup with savory sausage, cheese tortellini, and fresh vegetables in a rich tomato broth.

  • 1 lb Italian sausage (casings removed)
  • 1 tbsp olive oil
  • 1 cup diced onion
  • 1 cup diced carrot
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 9 oz cheese tortellini (fresh or frozen)
  • 3 cups fresh spinach
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook, breaking it apart, until browned, about 5 minutes.
  2. Add onion, carrot, and celery. Cook until softened, about 5 minutes. Stir in garlic and cook 1 minute.
  3. Pour in diced tomatoes and chicken broth. Add basil, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 10 minutes.
  5. Add tortellini and cook according to package directions until tender, usually 3-5 minutes.
  6. Stir in spinach until wilted, about 1 minute.
  7. Ladle into bowls and top with Parmesan cheese.

Notes

  • Use mild or hot Italian sausage based on your preference.
  • Substitute spinach with kale or Swiss chard if desired.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat gently on the stovetop, adding a splash of broth if needed.
