- 1 pound ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Brown the ground beef in a large pot over medium heat. Drain excess fat.
- Add onion and garlic. Cook until softened, about 3 minutes.
- Stir in crushed tomatoes, beef broth, basil, oregano, salt, and pepper. Bring to a boil.
- Add broken lasagna noodles. Reduce heat and simmer until noodles are tender, about 15 minutes.
- In a small bowl, mix ricotta, mozzarella, Parmesan, and parsley.
- Serve soup in bowls. Top with a dollop of the cheese mixture.
Notes
- Use gluten-free lasagna noodles for a gluten-free version.
- Add a pinch of red pepper flakes for heat.
- Leftovers keep well in the fridge for up to 3 days.
