Lasagna Soup

A hearty soup that captures the flavors of traditional lasagna in a bowl.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add onion and garlic. Cook until softened, about 3 minutes.
  3. Stir in crushed tomatoes, beef broth, basil, oregano, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles. Reduce heat and simmer until noodles are tender, about 15 minutes.
  5. In a small bowl, mix ricotta, mozzarella, Parmesan, and parsley.
  6. Serve soup in bowls. Top with a dollop of the cheese mixture.

Notes

  • Use gluten-free lasagna noodles for a gluten-free version.
  • Add a pinch of red pepper flakes for heat.
  • Leftovers keep well in the fridge for up to 3 days.
