- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 1/4 cup granulated sugar for rolling
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, beat butter and 1 cup sugar until light and fluffy, about 2 minutes.
- Add egg, lemon juice, lemon zest, and vanilla. Beat until combined.
- Gradually add the flour mixture. Mix until just combined. Do not overmix.
- Cover the dough and refrigerate for 30 minutes.
- Place the remaining 1/4 cup sugar in a shallow bowl. Roll dough into 1-inch balls, then roll each ball in sugar.
- Place balls 2 inches apart on the prepared baking sheet. Flatten slightly with the bottom of a glass.
- Bake for 10–12 minutes, until edges are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
- Chilling the dough prevents spreading and gives a chewier texture.
- For extra lemon flavor, add more zest.
- Store cookies in an airtight container at room temperature for up to 5 days.
