These lemon sugar cookies are bright and tangy. They have a soft, chewy center with crisp edges. Perfect for a quick dessert or snack.

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 cup granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter and 1 cup sugar until light and fluffy, about 2 minutes.
  4. Add egg, lemon juice, lemon zest, and vanilla. Beat until combined.
  5. Gradually add the flour mixture. Mix until just combined. Do not overmix.
  6. Cover the dough and refrigerate for 30 minutes.
  7. Place the remaining 1/4 cup sugar in a shallow bowl. Roll dough into 1-inch balls, then roll each ball in sugar.
  8. Place balls 2 inches apart on the prepared baking sheet. Flatten slightly with the bottom of a glass.
  9. Bake for 10–12 minutes, until edges are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Chilling the dough prevents spreading and gives a chewier texture.
  • For extra lemon flavor, add more zest.
  • Store cookies in an airtight container at room temperature for up to 5 days.
