- 1 lb boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup kalamata olives
- 1/2 cup crumbled feta cheese
- 2 cups mixed greens
- For dressing: 3 tbsp olive oil, 1 tbsp lemon juice, 1 tsp dried oregano, salt and pepper to taste
- Season chicken with oregano, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Cook chicken for 6-7 minutes per side until cooked through.
- Let chicken rest for 5 minutes, then slice.
- In a bowl, combine tomatoes, cucumber, onion, olives, and feta.
- Whisk dressing ingredients together.
- Divide greens among bowls.
- Top with chicken and vegetable mixture.
- Drizzle dressing over each bowl.
