  • 3 tbsp chia seeds
  • 1 cup almond milk (or any milk of your choice)
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp vanilla extract

Instructions

  1. In a bowl, mash half the mango into a smooth puree.
  2. Add chia seeds, almond milk, honey (if using), and vanilla extract. Mix well.
  3. Refrigerate for at least 2 hours or overnight, stirring once after 30 minutes.
  4. Before serving, layer the pudding with the remaining diced mango.
