- 3 pounds sweet potatoes, peeled and cubed
- 1/2 cup mascarpone cheese
- 1/4 cup maple syrup
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Place sweet potatoes in a large pot. Cover with water. Bring to a boil.
- Reduce heat. Simmer for 15-20 minutes until tender. Drain well.
- Return sweet potatoes to pot. Add mascarpone, maple syrup, butter, salt, and pepper.
- Mash or whip with a hand mixer until smooth and creamy. Serve warm.
