- 2 cans (15 oz each) butter beans, drained and rinsed
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup vegetable broth
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- Fresh basil for garnish
- Heat olive oil in a large skillet over medium heat.
- Add garlic and cook for 1 minute until fragrant.
- Stir in sun-dried tomatoes and cook for 2 minutes.
- Pour in heavy cream and vegetable broth. Bring to a simmer.
- Add butter beans, Parmesan, oregano, and red pepper flakes. Stir well.
- Cook for 5-7 minutes until sauce thickens. Season with salt and pepper.
- Serve hot, garnished with fresh basil.

- You can use dried butter beans soaked overnight instead of canned.
