4 boneless skinless chicken breasts
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 cup pumpkin puree
1 cup chicken broth (low sodium)
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried sage
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
Salt and pepper to taste
2 cups fresh spinach (optional)
Instructions
Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4 minutes per side until golden. Remove chicken and set aside.
In the same skillet, add onion and garlic. Cook for 2 minutes until softened.
Stir in pumpkin puree, chicken broth, sage, thyme, and nutmeg. Bring to a simmer.
Reduce heat to low. Stir in heavy cream and Parmesan cheese until smooth.
Return chicken to the skillet. Spoon sauce over chicken. Cover and simmer for 15 minutes until chicken is cooked through (165°F internal).
If using spinach, stir it in during the last 2 minutes of cooking until wilted.
Serve hot with rice, pasta, or crusty bread.
Notes
You can substitute chicken thighs for breasts if preferred.
For a thicker sauce, let it simmer uncovered for a few extra minutes.
