2 large Granny Smith apples, peeled, cored, and diced
2 tablespoons white sugar
2 tablespoons brown sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
2 teaspoons cornstarch
2 tablespoons water
1 package (14.1 oz) refrigerated pie crusts (2 crusts)
1 egg, beaten (for egg wash)
1 tablespoon white sugar (for sprinkling)
1 teaspoon ground cinnamon (for sprinkling)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium saucepan, combine diced apples, white sugar, brown sugar, lemon juice, and cinnamon. Cook over medium heat for 5 minutes, stirring occasionally.
Mix cornstarch and water in a small bowl. Pour into the apple mixture. Cook for 1-2 minutes until thickened. Remove from heat and let cool completely.
Roll out one pie crust on a lightly floured surface. Cut into 4 equal rectangles. Repeat with the second crust for a total of 8 rectangles.
Spoon about 2 tablespoons of apple filling onto the center of each of 4 rectangles. Brush edges with beaten egg. Place remaining rectangles on top. Press edges with a fork to seal.
Cut a small slit on top of each pie for steam to escape. Place pies on the prepared baking sheet. Brush tops with beaten egg. Mix 1 tablespoon sugar with 1 teaspoon cinnamon. Sprinkle on top.
Bake for 18-20 minutes until golden brown. Cool on a wire rack for 5 minutes before serving.
Notes
For extra crispiness, you can deep fry these pies at 350°F (175°C) for 3-4 minutes instead of baking.
Store leftovers in an airtight container at room temperature for up to 2 days.
You can use store-bought puff pastry sheets for a flakier texture.
