A hearty Mediterranean pasta bake with rich flavors and fresh ingredients.

  • 400g penne pasta
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 200g cherry tomatoes, halved
  • 100g black olives, sliced
  • 150g feta cheese, crumbled
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions, then drain.
  3. Heat olive oil in a pan. Sauté onion and garlic until soft.
  4. Add bell pepper, cherry tomatoes, and olives. Cook for 5 minutes.
  5. Stir in tomato sauce, oregano, basil, salt, and pepper.
  6. Combine cooked pasta with the sauce mixture.
  7. Transfer to a baking dish. Top with feta and mozzarella cheese.
  8. Bake for 20 minutes or until cheese is golden.

Notes

  • Use gluten-free pasta if needed.
  • Add grilled chicken for extra protein.
