Roasted cauliflower with a creamy cheese sauce that makes it tender and flavorful. This dish is simple to prepare and pairs well with any main course.

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 1/4 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 20 minutes until golden and tender.
  4. While cauliflower roasts, make the sauce. In a saucepan, melt butter over medium heat. Add garlic and cook for 1 minute.
  5. Stir in heavy cream and bring to a gentle simmer. Add shredded cheddar cheese and paprika. Stir until cheese melts and sauce is smooth.
  6. Pour the cheese sauce over the roasted cauliflower and toss gently.
  7. Return to the oven and bake for another 5 minutes until bubbly.
  8. Serve hot.

Notes

  • You can use any melting cheese like mozzarella or gouda.
  • For extra crunch, add breadcrumbs on top before the final bake.
