- 1 large head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tablespoon butter
- 1 clove garlic, minced
- 1/4 teaspoon paprika
- Preheat your oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast for 20 minutes until golden and tender.
- While cauliflower roasts, make the sauce. In a saucepan, melt butter over medium heat. Add garlic and cook for 1 minute.
- Stir in heavy cream and bring to a gentle simmer. Add shredded cheddar cheese and paprika. Stir until cheese melts and sauce is smooth.
- Pour the cheese sauce over the roasted cauliflower and toss gently.
- Return to the oven and bake for another 5 minutes until bubbly.
