Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup black olives
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, and black olives.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over the pasta mixture and toss to coat.
  5. Gently fold in crumbled feta cheese.
  6. Chill for at least 30 minutes before serving.
