These mini chicken quesadillas are quick to make. You can serve them as a snack or appetizer. They are crispy on the outside and cheesy inside.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 8 small flour tortillas
  • 1 tablespoon olive oil

Instructions

  1. Mix the shredded chicken, cheese, salsa, and sour cream in a bowl.
  2. Spoon the mixture onto half of each tortilla. Fold the other half over.
  3. Heat the olive oil in a skillet over medium heat.
  4. Cook the quesadillas for 2-3 minutes per side until golden and cheese melts.
  5. Cut each quesadilla into wedges. Serve warm.
