Ingredients

  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 3 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pre-made pie crust or puff pastry

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out the pie crust and cut into small circles to fit a muffin tin.
  3. Press the crust circles into the muffin tin.
  4. In a bowl, whisk eggs, milk, salt, and pepper.
  5. Add chopped spinach and shredded cheese to the egg mixture.
  6. Pour the mixture into each crust-lined muffin cup.
  7. Bake for 15-20 minutes or until the quiches are set and golden.
  8. Let cool for 5 minutes before serving.
