Mississippi Mud Potatoes are a creamy, cheesy potato casserole. A crunchy topping finishes the dish. It works well for potlucks or family dinners.

Ingredients

  • 4 cups diced potatoes (about 4 medium potatoes)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/4 cup melted butter
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed cornflakes (or crushed butter crackers)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and dice the potatoes. Boil them in salted water until tender, about 10 minutes. Drain well.
  3. In a large bowl, mix the soup, sour cream, 1 cup of cheese, 1/4 cup melted butter, onion, salt, and pepper.
  4. Add the drained potatoes. Stir everything together.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Sprinkle the remaining 1 cup of cheese on top.
  7. In a small bowl, mix the crushed cornflakes with 2 tablespoons melted butter. Sprinkle this over the cheese.
  8. Bake for 35 to 40 minutes. The top should be golden and the potatoes bubbly.
  9. Let it cool for 5 minutes before serving.

Notes

  • You can prepare this dish up to one day ahead. Cover and refrigerate. Add the topping just before baking.
  • For a vegetarian version, use a cream of mushroom soup that is labeled vegetarian.
  • If you want extra crunch, add more crushed cornflakes on top.
