- 250g pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 50g feta cheese, crumbled (optional)
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, olives, basil, and parsley.
- In a small bowl, whisk olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour dressing over the salad and toss to coat.
- Sprinkle feta cheese on top if using.
- Chill in the fridge for 30 minutes before serving.
Notes
- Use gluten-free pasta if needed.
- Add grilled chicken or shrimp for extra protein.
- Store leftovers in an airtight container for up to 2 days.
