A refreshing pasta salad with Italian herbs, perfect for a quick meal or side dish.

Ingredients

  • 250g pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 50g feta cheese, crumbled (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, olives, basil, and parsley.
  3. In a small bowl, whisk olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over the salad and toss to coat.
  5. Sprinkle feta cheese on top if using.
  6. Chill in the fridge for 30 minutes before serving.

Notes

  • Use gluten-free pasta if needed.
  • Add grilled chicken or shrimp for extra protein.
  • Store leftovers in an airtight container for up to 2 days.
