  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 4 cups sliced fresh peaches
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/2 cup all-purpose flour
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat oven to 325°F. Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into a 9-inch springform pan. Bake 10 minutes.
  2. Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Pour over crust.
  3. In a bowl, toss peaches with brown sugar, lemon juice, and cinnamon. Spoon over cheesecake batter.
  4. Combine flour and cold butter with a pastry cutter until crumbly. Sprinkle over peaches.
  5. Bake 60-70 minutes until center is almost set. Cool completely, then refrigerate 4 hours before serving.

  • Use ripe but firm peaches for best texture.
  • You can substitute canned peaches in juice, drained.
