- 2 cups all-purpose flour
- 1 cup rolled oats
- 3/4 cup packed brown sugar
- 1 cup unsalted butter, cold and cubed
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 cups fresh peaches, peeled and sliced
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F. Grease a 9×13 inch baking pan.
- Mix flour, oats, brown sugar, baking soda, and salt in a large bowl.
- Cut in the cold butter using a pastry blender until the mixture is crumbly.
- Press half of the crumb mixture evenly into the prepared pan.
- Toss the sliced peaches with granulated sugar, cornstarch, lemon juice, and vanilla extract.
- Spread the peach mixture over the crust.
- Sprinkle the remaining crumb mixture over the peaches.
- Bake for 35 to 40 minutes, until the top is golden brown and the filling is bubbly.
- Let the bars cool completely before cutting into squares.
Notes
- Use ripe but firm peaches for the best texture.
- You can substitute frozen peaches if fresh ones are not in season.
