These peach crumb bars have a buttery oat crust and a sweet peach filling. They are easy to make and perfect for summer.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup packed brown sugar
  • 1 cup unsalted butter, cold and cubed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 cups fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13 inch baking pan.
  2. Mix flour, oats, brown sugar, baking soda, and salt in a large bowl.
  3. Cut in the cold butter using a pastry blender until the mixture is crumbly.
  4. Press half of the crumb mixture evenly into the prepared pan.
  5. Toss the sliced peaches with granulated sugar, cornstarch, lemon juice, and vanilla extract.
  6. Spread the peach mixture over the crust.
  7. Sprinkle the remaining crumb mixture over the peaches.
  8. Bake for 35 to 40 minutes, until the top is golden brown and the filling is bubbly.
  9. Let the bars cool completely before cutting into squares.

Notes

  • Use ripe but firm peaches for the best texture.
  • You can substitute frozen peaches if fresh ones are not in season.
  • Store leftover bars in an airtight container in the refrigerator for up to 4 days.
