  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1/4 cup water

Instructions

  1. Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Mix ground chicken, breadcrumbs, onion, garlic, egg, salt, and pepper in a bowl. Shape into 1-inch meatballs.
  3. Place meatballs on the baking sheet. Bake for 15-18 minutes until cooked through.
  4. Whisk peanut butter, soy sauce, rice vinegar, honey, and water in a small saucepan over low heat. Stir until smooth.
  5. Pour the sauce over the baked meatballs. Toss to coat evenly.
  6. Serve immediately.
