A moist and flavorful cake combining the sweetness of pears with the warmth of ginger.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 2 ripe pears, peeled and diced
  • 1 tbsp fresh ginger, grated

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, ground ginger, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour.
  5. Fold in diced pears and grated ginger.
  6. Pour the batter into the prepared pan and bake for 40-45 minutes or until a toothpick comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • Use firm but ripe pears for the best texture.
  • Adjust the amount of ginger to suit your taste.
  • Store leftovers in an airtight container for up to 3 days.
