- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup milk
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese (optional)
- 2 tablespoons chopped chives (optional)
- Melt butter in a large pot over medium heat. Add onion and garlic. Cook until soft, about 5 minutes.
- Add diced potatoes and broth. Bring to a boil. Reduce heat and simmer for 20 minutes, until potatoes are tender.
- Use an immersion blender to partially blend the soup. Leave some chunks for texture.
- Stir in milk, salt, and pepper. Heat through without boiling.
- Ladle into bowls. Top with cheese and chives if desired.
