A creamy and comforting soup made with pumpkin and sweet potato. This recipe is perfect for a cozy meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound pumpkin, peeled and cubed
  • 1 pound sweet potato, peeled and cubed
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 1/2 cup coconut milk

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic. Cook until soft, about 5 minutes.
  3. Add pumpkin, sweet potato, and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, until vegetables are tender.
  5. Stir in cumin, ginger, salt, and pepper.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in coconut milk. Heat through for 2 minutes.
  8. Serve hot.

Notes

  • You can use butternut squash instead of pumpkin.
  • Add more broth for a thinner soup.
  • Top with roasted seeds or a drizzle of cream.
