- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound pumpkin, peeled and cubed
- 1 pound sweet potato, peeled and cubed
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 1/2 cup coconut milk
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic. Cook until soft, about 5 minutes.
- Add pumpkin, sweet potato, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes, until vegetables are tender.
- Stir in cumin, ginger, salt, and pepper.
- Use an immersion blender to puree the soup until smooth.
- Stir in coconut milk. Heat through for 2 minutes.
- Serve hot.
Notes
- You can use butternut squash instead of pumpkin.
- Add more broth for a thinner soup.
- Top with roasted seeds or a drizzle of cream.
