These Pumpkin Apple Oat Bars are a healthy, easy-to-make snack. You combine pumpkin, apple, and oats for a moist, flavorful bar. Perfect for breakfast or a quick treat.

  • 1 cup pumpkin puree
  • 1 medium apple, peeled and grated
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix pumpkin puree, grated apple, maple syrup, and melted coconut oil.
  3. Add oats, flour, pumpkin pie spice, baking soda, and salt. Stir until combined. Fold in walnuts if using.
  4. Pour the batter into the prepared pan. Spread evenly.
  5. Bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean.
  6. Let cool completely in the pan before cutting into bars.

Notes

  • You can substitute the whole wheat flour with all-purpose flour or a gluten-free blend.
