1 1/2 cups graham cracker crumbs
1/3 cup melted butter
2 tablespoons granulated sugar
16 ounces cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 cup pumpkin puree
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 cup cold butter, cubed
1/2 cup chopped pecans (optional)
Instructions
Preheat your oven to 350°F. Line a 9×9 inch baking pan with parchment paper.
Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into the bottom of the pan.
Bake the crust for 10 minutes. Let it cool.
Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, mixing well.
Stir in pumpkin puree, vanilla, and pumpkin pie spice until combined. Pour over the crust.
In a small bowl, mix flour and brown sugar. Cut in cold butter until crumbly. Stir in pecans if using.
Sprinkle the streusel over the cheesecake layer.
Bake for 35 to 40 minutes, until the center is set.
Cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
Notes
Use full-fat cream cheese for the best texture.
You can skip the pecans if you prefer.
Store leftovers in the refrigerator for up to 5 days.
