- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup milk
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Preheat your oven to 350 degrees F. Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, 1 cup sugar, brown sugar, baking soda, salt, and pumpkin pie spice.
- In a separate bowl, mix pumpkin puree, oil, 2 eggs, and milk until smooth. Add wet ingredients to dry ingredients and stir until just combined.
- In a small bowl, beat cream cheese, 1/4 cup sugar, 1 egg, and vanilla extract until smooth.
- Spoon half the muffin batter into the muffin cups. Add a tablespoon of cream cheese mixture on top. Cover with remaining muffin batter.
- Bake for 20 to 25 minutes, until a toothpick inserted into the muffin portion comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
