  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup canned pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk flour, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. Beat butter and sugar in a large bowl until light and fluffy.
  4. Mix in pumpkin puree, egg, and vanilla until smooth.
  5. Gradually add dry ingredients to wet mixture, stirring until combined.
  6. Fold in chocolate chips.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  8. Bake for 12 to 14 minutes, until edges are set and lightly golden.
  9. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.

Notes

  • Use canned pumpkin puree, not pumpkin pie filling.
  • Chill dough for 30 minutes if you prefer thicker cookies.
  • Store in an airtight container at room temperature for up to 5 days.
