- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup pumpkin puree
- 1/4 cup water
- For cream cheese filling: 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Preheat oven to 350°F. Grease a 9×5 inch loaf pan.
- In a bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In another bowl, beat 1 cup sugar, oil, and 2 eggs. Stir in pumpkin and water.
- Add dry ingredients to wet mixture. Stir until just combined.
- In a separate bowl, beat cream cheese, 1/4 cup sugar, 1 egg, and vanilla until smooth.
- Pour half the pumpkin batter into pan. Spread cream cheese mixture on top. Pour remaining batter over it.
- Swirl with a knife for a marbled effect.
- Bake 55-65 minutes until a toothpick inserted in center comes out clean.
- Cool in pan 10 minutes, then remove to wire rack. Cool completely.
Notes
- Store in the refrigerator because of the cream cheese.
- You can add 1/2 cup chopped walnuts or pecans to the batter.
