- 1 cup pumpkin puree
- 2 large eggs
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- Preheat oven to 350°F (175°C).
- In a bowl, whisk eggs and sugar until smooth.
- Add pumpkin puree, milk, vanilla, cinnamon, nutmeg, and salt. Mix well.
- Pour mixture into four ramekins.
- Place ramekins in a baking dish. Add hot water to reach halfway up the sides.
- Bake for 40 minutes until set but slightly jiggly in center.
- Cool slightly. Serve warm or chilled.
Notes
- Use plain pumpkin puree, not pumpkin pie filling.
- For a smoother texture, strain the mixture before baking.
- Refrigerate leftovers for up to 3 days.
