  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup dark chocolate chips
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the softened butter and brown sugar until smooth.
  3. Add the pumpkin puree, egg, and vanilla extract. Stir until combined.
  4. In a separate bowl, whisk together the flour, oats, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture. Stir until just combined.
  6. Fold in the dark chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10 to 12 minutes, until the edges are set and lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Chill the dough for 30 minutes if you want thicker cookies.
  • Use dark chocolate chips with at least 60% cacao for a richer flavor.
  • Store cookies in an airtight container at room temperature for up to 5 days.
