A delicious autumn breakfast featuring thick slices of bread soaked in a spiced pumpkin custard and pan-fried until golden brown.

  • 3 large eggs
  • 1/2 cup canned pumpkin puree
  • 1/2 cup milk or heavy cream
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 tablespoons butter or oil for cooking
  • Maple syrup and powdered sugar for serving

Instructions

  1. In a medium bowl, whisk together eggs, pumpkin puree, milk, brown sugar, vanilla extract, pumpkin pie spice, and salt until smooth.
  2. Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter.
  3. Dip each slice of bread into the pumpkin mixture, allowing it to soak for 15-20 seconds per side.
  4. Place the soaked bread slices on the hot skillet and cook for 3-4 minutes per side, until golden brown and cooked through.
  5. Repeat with remaining bread, adding more butter to the skillet as needed.
  6. Serve immediately with maple syrup and a dusting of powdered sugar.
