A creamy pumpkin soup with a hint of ginger. Perfect for fall.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups pumpkin puree
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic and ginger. Cook for 1 minute.
  4. Add pumpkin puree and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in coconut milk, salt, pepper, and nutmeg.
  7. Use an immersion blender to puree until smooth.
  8. Serve warm.

Notes

  • You can use canned pumpkin puree or fresh roasted pumpkin.
  • Adjust ginger to your taste.
  • For a thinner soup, add more broth.
