- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 cups pumpkin puree
- 2 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- Heat olive oil in a pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Stir in garlic and ginger. Cook for 1 minute.
- Add pumpkin puree and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in coconut milk, salt, pepper, and nutmeg.
- Use an immersion blender to puree until smooth.
- Serve warm.
Notes
- You can use canned pumpkin puree or fresh roasted pumpkin.
- Adjust ginger to your taste.
- For a thinner soup, add more broth.
