- 1 cup pumpkin puree
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup vegetable broth
- 8 ounces pasta of your choice
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a saucepan over medium heat. Add garlic and cook for 1 minute.
- Stir in pumpkin puree, vegetable broth, heavy cream, salt, pepper, and nutmeg.
- Simmer for 10 minutes, stirring occasionally.
