These pumpkin morning glory muffins are packed with vegetables, fruit, and warm spices. They make a healthy breakfast or snack.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup grated carrot
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg.
  3. In another bowl, mix pumpkin puree, brown sugar, maple syrup, eggs, oil, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  5. Fold in grated carrot, shredded coconut, raisins, and walnuts.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18 to 22 minutes, until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can substitute whole wheat flour for half the all-purpose flour.
  • Add 1/2 cup chopped apple for extra moisture.
  • Store muffins in an airtight container at room temperature for up to 3 days.
