1/2 cup unsalted butter
1/2 cup pumpkin puree
1 cup granulated sugar
1 teaspoon vanilla extract
3 cups quick-cooking oats
1/2 cup creamy peanut butter
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
Instructions
Line a baking sheet with wax paper or parchment paper.
In a medium saucepan, combine butter, pumpkin puree, and sugar. Heat over medium heat, stirring constantly, until the mixture comes to a boil.
Boil for 1 minute, stirring continuously. Remove from heat.
Stir in vanilla extract, peanut butter, oats, pumpkin pie spice, and salt. Mix until well combined.
Drop tablespoon-sized portions onto the prepared baking sheet.
Let cookies set at room temperature for about 30 minutes, or until firm. Store in an airtight container.
Notes
Use natural peanut butter for best texture.
If the mixture is too dry, add 1-2 tablespoons of milk (dairy or plant-based).
Cookies will keep for up to 5 days at room temperature.
