- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup pumpkin puree
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup Nutella
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- In a bowl, whisk flour, baking soda, salt, and pumpkin pie spice.
- In a large bowl, beat butter and sugars until fluffy. Add pumpkin, egg, and vanilla. Mix well.
- Gradually add dry ingredients to wet mixture. Stir until combined.
- Chill dough for 30 minutes.
- Scoop 1 tablespoon of dough. Flatten slightly. Place 1/2 teaspoon Nutella in center. Top with another scoop of dough. Seal edges.
- Place cookies 2 inches apart on baking sheets.
- Bake 10-12 minutes until edges are set. Cool on pan for 5 minutes, then transfer to wire rack.
Notes
- Chill dough to prevent spreading.
- Use a cookie scoop for even sizes.
- Store in an airtight container for up to 5 days.
