Pumpkin Nutella-Stuffed Cookies

Soft pumpkin cookies with a gooey Nutella center. A simple treat for fall.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Nutella

Instructions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a bowl, whisk flour, baking soda, salt, and pumpkin pie spice.
  3. In a large bowl, beat butter and sugars until fluffy. Add pumpkin, egg, and vanilla. Mix well.
  4. Gradually add dry ingredients to wet mixture. Stir until combined.
  5. Chill dough for 30 minutes.
  6. Scoop 1 tablespoon of dough. Flatten slightly. Place 1/2 teaspoon Nutella in center. Top with another scoop of dough. Seal edges.
  7. Place cookies 2 inches apart on baking sheets.
  8. Bake 10-12 minutes until edges are set. Cool on pan for 5 minutes, then transfer to wire rack.

Notes

  • Chill dough to prevent spreading.
  • Use a cookie scoop for even sizes.
  • Store in an airtight container for up to 5 days.
