This is a one-pot meal. It combines pumpkin, orzo, and chicken sausage. You get a creamy, savory dish. It is perfect for fall.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup pumpkin puree
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced chicken sausage. Cook until browned, about 5 minutes. Remove and set aside.
  3. In the same pot, add onion. Cook for 3 minutes until soft.
  4. Add garlic. Cook for 1 minute.
  5. Stir in pumpkin puree, orzo, chicken broth, heavy cream, salt, pepper, and nutmeg.
  6. Bring to a boil. Reduce heat to low. Cover and simmer for 15 minutes, stirring occasionally.
  7. Return sausage to the pot. Cook for 2 more minutes until heated through.
  8. Serve garnished with fresh parsley.

Notes

  • You can use mild or spicy chicken sausage.
  • For a thicker consistency, cook uncovered for the last 5 minutes.
  • Leftovers keep in the fridge for up to 3 days.
