Pumpkin overnight oats with almond milk, pumpkin puree, and chia seeds. A quick and healthy breakfast you prepare the night before.

Ingredients

  • 2.5 cups unsweetened almond milk
  • 1/2 cup pumpkin puree not pumpkin pie filling
  • 3 tablespoons pure maple syrup
  • 2 cups old fashioned rolled oats
  • 2 tablespoons chia seeds
  • 1.5 teaspoons pumpkin pie spice
  • Optional toppings: pecans, pepitas, chocolate chips or fruit toppings are not included in nutrition information

Instructions

  1. Place the almond milk, pumpkin and maple syrup in a medium bowl and whisk well to combine.
  2. Add the oats, chia seeds and pumpkin pie spice and stir well.
  3. Let stand 10 minutes to allow the chia seeds to bloom, then stir once more. Cover with plastic wrap and refrigerate for a minimum of 4 hours or overnight.
  4. Serve cold or warmed with optional toppings if desired.

Notes

  • Optional toppings like pecans, pepitas, chocolate chips, or fruit are not included in the nutrition information.
