- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup pumpkin puree
- 1/2 cup vegetable broth
- 1/2 cup heavy cream
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Heat olive oil in a saucepan over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute.
- Stir in pumpkin puree and vegetable broth.
- Add cream, nutmeg, salt, and pepper. Stir well.
- Simmer for 10 minutes, stirring occasionally.
- If using, stir in Parmesan cheese until melted.
- Serve over cooked pasta.
Notes
- You can use coconut cream instead of heavy cream for a dairy-free version.
- Add a pinch of cayenne for some heat.
