  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat your oven to 350°F. Line a 9×9 inch baking pan with parchment paper.
  2. Make the crust: Mix 1 1/2 cups flour and 1/2 cup granulated sugar. Cut in 1/2 cup cold butter until crumbly. Press into the pan.
  3. Bake the crust for 15 minutes.
  4. Make the filling: Whisk pumpkin puree, 1/2 cup brown sugar, egg, heavy cream, pumpkin pie spice, and salt until smooth.
  5. Pour the filling over the baked crust.
  6. Make the topping: Combine oats, 1/4 cup flour, and 1/4 cup brown sugar. Cut in 1/4 cup cold butter until crumbly. Sprinkle over the filling.
  7. Bake for 30 to 35 minutes until the filling is set and the topping is golden.
  8. Cool completely before slicing.
