A savory North African-style egg dish with pumpkin, tomatoes, and warm spices. Perfect for a hearty breakfast or dinner.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • 1 can (14 oz) diced tomatoes
  • 1 cup pumpkin puree
  • Salt and pepper to taste
  • 4 eggs
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic, cumin, paprika, and cinnamon. Cook for 1 minute.
  4. Add diced tomatoes and pumpkin puree. Stir well.
  5. Season with salt and pepper. Simmer for 10 minutes.
  6. Make 4 small wells in the sauce. Crack an egg into each well.
  7. Cover the skillet. Cook until eggs are set to your liking, about 5-7 minutes.
  8. Garnish with fresh parsley. Serve warm.

Notes

  • You can use canned pumpkin or roasted fresh pumpkin.
  • Adjust spices to your taste.
  • Serve with crusty bread or pita.
