1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup pumpkin puree
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips
1 cup mini marshmallows
1/2 cup graham cracker crumbs
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Mix in the pumpkin puree, egg, and vanilla extract until well combined.
In a separate bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the chocolate chips and mini marshmallows.
Spread the dough evenly into the prepared pan. Sprinkle graham cracker crumbs on top.
Bake for 20-25 minutes, until the edges are golden and a toothpick inserted in the center comes out clean.
Allow to cool completely in the pan before cutting into bars.
Notes
You can substitute pumpkin pie spice with 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon ginger.
Store bars in an airtight container at room temperature for up to 5 days.
