1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup unsalted butter, melted
2 large eggs
1 cup pumpkin puree
1/4 cup strong brewed coffee, cooled
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F. Grease a 9×5 inch loaf pan.
In a bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, cloves, ginger, and salt.
In a large bowl, mix sugars and melted butter until smooth.
Beat in eggs one at a time. Stir in pumpkin puree, coffee, and vanilla.
Gradually add dry ingredients to wet mixture. Stir just until combined.
Pour batter into prepared pan. Bake 55-65 minutes, until a toothpick inserted in center comes out clean.
Cool in pan 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use pumpkin puree, not pumpkin pie filling.
For a stronger coffee flavor, use espresso.
Store bread in an airtight container at room temperature for up to 3 days.
