  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • For coating: 1/4 cup granulated sugar + 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Line baking sheets with parchment paper.
  2. Whisk flour, baking soda, cream of tartar, salt, and pumpkin pie spice in a bowl.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add egg, pumpkin puree, and vanilla. Mix well.
  4. Gradually add dry ingredients to wet mixture. Stir until just combined. Do not overmix.
  5. In a small bowl, mix coating sugar and cinnamon.
  6. Shape dough into 1-inch balls. Roll each ball in cinnamon sugar mixture. Place on baking sheets 2 inches apart.
  7. Bake for 10 minutes, until edges are set. Centers will look soft. Cool on sheets for 5 minutes, then transfer to wire racks.

Notes

  • Use fresh pumpkin pie spice for best flavor.
  • Chill dough for 30 minutes if too sticky.
  • Store cookies in an airtight container for up to 5 days.
