- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- For coating: 1/4 cup granulated sugar + 2 teaspoons ground cinnamon
- Preheat your oven to 350°F. Line baking sheets with parchment paper.
- Whisk flour, baking soda, cream of tartar, salt, and pumpkin pie spice in a bowl.
- In a large bowl, beat butter and sugar until light and fluffy. Add egg, pumpkin puree, and vanilla. Mix well.
- Gradually add dry ingredients to wet mixture. Stir until just combined. Do not overmix.
- In a small bowl, mix coating sugar and cinnamon.
- Shape dough into 1-inch balls. Roll each ball in cinnamon sugar mixture. Place on baking sheets 2 inches apart.
- Bake for 10 minutes, until edges are set. Centers will look soft. Cool on sheets for 5 minutes, then transfer to wire racks.
