1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons melted butter
16 ounces cream cheese, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
3/4 cup pumpkin puree
2 tablespoons brown sugar
1 teaspoon pumpkin pie spice
Instructions
Preheat your oven to 325°F. Line a 9×9 inch baking pan with parchment paper.
Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the pan.
Bake the crust for 10 minutes. Let it cool slightly.
Beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Mix well.
In a separate bowl, combine pumpkin puree, brown sugar, and pumpkin pie spice.
Pour the cheesecake batter over the crust. Drop spoonfuls of the pumpkin mixture on top. Use a knife to swirl them together.
Bake for 35 to 40 minutes, until the edges are set but the center jiggles slightly.
Cool completely at room temperature, then refrigerate for at least 4 hours before slicing.
Notes
Use room temperature cream cheese for a smooth batter.
Chill the bars overnight for cleaner slices.
Store leftovers in the refrigerator for up to 5 days.
